2 questions about 21st Century's 1/18 Sherman Series 1 and 5:
1. Do Series 1 and 5 have different colors? (In photos, Series 1 looks more green and Series 5 looks more brown)
2. Does Series 1 not have weathering and Series 5 does have weathering?

The first series Sherman was an OD green with no weathering. I'm not sure if the tools were painted or not, though the stowage was. it also had a small driver figure - as did all the original 21c vehicles and planes.
The fifth series Sherman featured a darker (more brownish) shade of green, with a subtle amount of weathering. The stowage and tools were all painted. It came with a properly-scaled driver figure, which was a variation on the US tanker from the "Battle of the Bulge" figure lineup.
Both tanks are identical in construction and the accessories included. Only the color and figures differed.
Hope this helps
