Forgive my ignorance, but what is the gain to putting Future polish on the canopies?

It removes the fogginess/ cloudiness of the clear plastic to make it look like real glass. Dipping the clear plastic part is the best way to do this.

Just allow the excess to drip off, don't let it pool up or get too thick or it will take a long time to dry and smear easily. It's not too difficult, but if you are not happy with your first attempt it can be easily removed with a mixture of warm water and common household ammonia. Good luck.

Can you get the future polish at a local hobby store? Ive heard of it being used just never seen it anywhere...

You can get it at any grocery store, should be in the floor care/house cleaning section.

do you need to worry about getting it on the paint that is on the canopy, or just dip the whole entire part in?

I wouldn't worry about getting the Future on the painted part of the canopy. It will just give the painted part more of a gloss appearance. In fact, you can use Future as a gloss clearcoat on your models. I've done it on many 1/48 scale aircraft.
