The 1:18 Kubel is one mysterious piece! I only have the Grey version and it is the only scheme produced that I am aware of.
However, I didn't get into vehicles till about 2003 (long after the kubel release and long bfore my post as AREA-21 president) So as of the moment I am not the most knowledgeable on this topic.
I will have to run this question up the flag pole at 21st to get the real answer. Now my interest is peaked, though my bet is that the answer is only 1 scheme S1 (grey) was mass produced.

I recently came across this 12 year old thread while looking for something
online and recently had taken pics of my Kubelwagen which I purchased from
a fellow member a few years ago...coincidence?
You'll notice that in some of these recent pics the windshield is not on the
Kubelwagen, the nub/ pin on one side of the windshield is broken off, it was
easier to photograph without it. The shovel and MG were in place when I
received the vehicle.
