planes i have seen but skipped on due to ignorance of collectors need or value. Are these rare (not that they all aren't with demise of 21stC)

I have all three. I think value and rarity are subjective terms. What is rare to one isnt rare to another. These days, just about any plane you can find cheap is a good find.
If you can go back and get them, I would do it. I love the Stuka personally and the Undertaker is the only Pacific P-51. Plus, the back story on the pilot is kinda cool.

if by 'euro camo' stuka you mean the S1 version, that is probably the rarest and worth having. Markings are slightly bogus but it is from a unit that served in Poland during the invasion. If it's the green one with yellow stripe that is Rudel's plane in Russia and is very cool to have...not sure how rare it is but i suspect it's getting there.
Undertaker is still relatively common..possibly the least popular mustang scheme, probably because it's pacific.. Not sure on the P40.
